Let’s face it, no matter how gourmet your school’s cafeteria may be, having it 7 days a week can get boring and at times sickening. Sometimes it’s satisfying to come up with your own concoctions.
Check out some easy college dorm room recipes you ought to try out this coming year:
Baked Potato - Before you pop your potato into the microwave, wash it well and poke holes all over the potato with a fork to allow the steam inside the potato to escape and prevent it from popping in the microwave. Put it on a microwave safe plate for 5 minutes and then with a paper towel (caution: it will be hot) flip it over and pop it back in the microwave to cook again for another 5 minutes or so. Take it out, cut it open, and add salt, butter, and shredded cheese.
Scrambled Eggs - Crack about 2-3 eggs in a bowl and whisk the eggs well with a fork in a bowl, feel free to add as little or as much shredded cheese as you’d like at this step. Then cook the eggs in the microwave for 45 seconds, take out and stir with a fork, then microwave again until eggs are almost set, usually about 30-45 seconds.
Hotdogs - Wrap a single hotdog in a semi wet paper towel and microwave for 30 seconds. Done.
Quesadillas - Butter two tortillas on each side and add shredded cheese in-between the two tortillas. Microwave for a minute and add toppings, i.e. salsa and sour cream.
S’Mores - Start with a graham cracker and add chocolate chips or a piece of a Hershey bar and place a marshmallow on top. Heat for 25 seconds and then place another gram cracker on top!
Ham and Cheese Wrap - Place ham on tortilla and top with pieces of the cheese slice. Top with slices of tomato. Roll up tortilla and microwave on 70% for 90 seconds.
Low-Fat Chocolate Cake - Combine cake mix, yogurt, and soda in a coffee mug then stir with fork until smooth and thick. Pop the mix into a microwave on high for about 60-90 seconds (or until top of cake begins to crack and pull away from the edges). Leave time to cool then top with powdered sugar if you’d like.
Cheesecake In A Mug - Mix all ingredients (2 ounces cream cheese, softened, 2 Tbsp sour cream, 1 egg, ½ tsp lemon juice, ¼ tsp vanilla, 2-4 Tbsp sugar replacement sub) thoroughly in a microwave-safe bowl. Pop into the microwave for 90 seconds on high temp, stir every 30 seconds to mix all ingredients then refrigerate until ready to serve.
Chicken Caesar Wrap - Mix the chicken breast, cheese and lettuce in a bowl. After this, add dressing, toss style.
Place mixture on tortilla and wrap tortilla.
Italian Turkey Roll Ups - Put 2 slices of turkey on a plate, on two separate sides. Place a piece of cheese over each piece of turkey along with 2 spoonfuls of tomato pesto and 1 spoonful of Basil pesto over the cheese. Roll up and enjoy!
